{"id":27,"date":"2013-10-21T10:44:18","date_gmt":"2013-10-21T10:44:18","guid":{"rendered":"http:\/\/thomas.w-p.me.uk\/blog\/?p=27"},"modified":"2013-10-22T13:53:37","modified_gmt":"2013-10-22T13:53:37","slug":"elderberry-wine","status":"publish","type":"post","link":"https:\/\/thomas.w-p.me.uk\/blog\/2013\/10\/elderberry-wine\/","title":{"rendered":"Elderberry Wine"},"content":{"rendered":"<figure id=\"attachment_4\" aria-describedby=\"caption-attachment-4\" style=\"width: 258px\" class=\"wp-caption alignright\"><a href=\"https:\/\/thomas.w-p.me.uk\/blog\/wp-content\/uploads\/2013\/10\/2013-09-22-15.59.19.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-4 \" title=\"Picking sloes\" alt=\"2013-09-22 15.59.19\" src=\"https:\/\/thomas.w-p.me.uk\/blog\/wp-content\/uploads\/2013\/10\/2013-09-22-15.59.19-258x300.jpg\" width=\"258\" height=\"300\" srcset=\"https:\/\/thomas.w-p.me.uk\/blog\/wp-content\/uploads\/2013\/10\/2013-09-22-15.59.19-258x300.jpg 258w, https:\/\/thomas.w-p.me.uk\/blog\/wp-content\/uploads\/2013\/10\/2013-09-22-15.59.19-882x1024.jpg 882w, https:\/\/thomas.w-p.me.uk\/blog\/wp-content\/uploads\/2013\/10\/2013-09-22-15.59.19.jpg 1034w\" sizes=\"auto, (max-width: 258px) 100vw, 258px\" \/><\/a><figcaption id=\"caption-attachment-4\" class=\"wp-caption-text\">Picking sloes<\/figcaption><\/figure>\n<p>The wine making all started up again because of two things.<\/p>\n<ol>\n<li>A friend telling us about her bumper grape harvest and &#8220;we should make wine from them&#8221;<\/li>\n<li>an idle conversation whilst having a delightful autumn berry picking walk\u00a0 with the kids.<\/li>\n<\/ol>\n<p>Huge bunches of elderberries were hanging from the bushes that day but we were out for sloes and blackberries.\u00a0 The elderberries did look inviting so I went back a couple of days later and collected what I thought was enough for a demijohn of wine.\u00a0 I had no idea what I was doing of course.\u00a0 We also dug out the old home brew kit.\u00a0 The yeast was disgusting looking.\u00a0 I couldn&#8217;t imagine that it had survived 15 years in the pot.<\/p>\n<p>I did a lot of looking around for a recipe and in the end came up with my own version based on the <a href=\"http:\/\/www.wine-making-guides.com\/elderberry_wine.html\">Wine Making Guides web site<\/a>.\u00a0 This is the method I used, but from memory because I was really making it up as I went along.<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>1.35 kg fresh elderberries, topped up with blackberries because you didn&#8217;t pick enough<\/li>\n<li>1.35 ish kg granulated sugar, not measured too carefully<\/li>\n<li>8 pints water<\/li>\n<li>1 teaspoon citric acid you have lying around from the science clubs you ran<\/li>\n<li>1 teaspoon 15 year old manky looking wine yeast<\/li>\n<li>1 teaspoon fluffy looking wine nutrient that also looks past its best<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3>What to Do<\/h3>\n<ol>\n<li>\u00a0Strip the berries from the stalks using your fingers, getting thoroughly messy in the process (I later learned that a FORK is the preferred option for this).<\/li>\n<li>Far too late, don an apron to prevent further damage to clothes and relationship with wife.<\/li>\n<li>Forget to crush the berries.<\/li>\n<li>Put the berries in 4 pints of boiling water, leave to cool.\u00a0 Mash them when you realise that this is probably quite an important step not to leave out.<\/li>\n<li>Dissolve the sugar in 4 more pints of boiling water and strain the berries through a sieve in to the sugar.<\/li>\n<li>Add the citric acid, nutrient and yeast.<\/li>\n<li><a href=\"http:\/\/www.amazon.co.uk\/gp\/product\/B00EVS3SCO\/ref=as_li_qf_sp_asin_il_tl?ie=UTF8&amp;camp=1634&amp;creative=6738&amp;creativeASIN=B00EVS3SCO&amp;linkCode=as2&amp;tag=hombrebeg-21\"><img loading=\"lazy\" decoding=\"async\" class=\" alignright\" alt=\"\" src=\"https:\/\/images-na.ssl-images-amazon.com\/images\/I\/51kvB8Vo0KL._SL110_.jpg\" width=\"110\" height=\"110\" \/><\/a>Find <a href=\"http:\/\/www.amazon.co.uk\/gp\/product\/B002L5WEVK\/ref=as_li_qf_sp_asin_il_tl?ie=UTF8&amp;camp=1634&amp;creative=6738&amp;creativeASIN=B002L5WEVK&amp;linkCode=as2&amp;tag=hombrebeg-21\">a demijohn<\/a> in the roof of the garage.\u00a0 Gasp at how dirty it has got.\u00a0 Clean it for ages using bottle brush, <a href=\"http:\/\/www.amazon.co.uk\/gp\/product\/B00EVS3SCO\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1634&amp;creative=6738&amp;creativeASIN=B00EVS3SCO&amp;linkCode=as2&amp;tag=hombrebeg-21\">excellent magic balls<\/a><img loading=\"lazy\" decoding=\"async\" class=\"rphzokbrieqqypctsspg gkhjvitrluxadnirmbue\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/ir-uk.amazon-adsystem.com\/e\/ir?t=hombrebeg-21&amp;l=as2&amp;o=2&amp;a=B00EVS3SCO\" width=\"1\" height=\"1\" border=\"0\" \/> and 15 year old <a href=\"http:\/\/www.amazon.co.uk\/gp\/product\/B003E1GIU8\/ref=as_li_qf_sp_asin_il_tl?ie=UTF8&amp;camp=1634&amp;creative=6738&amp;creativeASIN=B003E1GIU8&amp;linkCode=as2&amp;tag=hombrebeg-21\">sterilising solution<\/a>.\u00a0 Don&#8217;t bother to read the instructions (I think I should have sterilised for longer).<\/li>\n<li>Pour the liquid into a demijohn and seal with an airlock.<\/li>\n<li>Store the wine in a warm place and wait for the fermentation to start.\u00a0 Checking approximately every 15 minutes until your family shout at you.<\/li>\n<li>After four days of checking, feel depressed and decide that the aged yeast was probably bad idea.\u00a0 Cycle to <a href=\"http:\/\/www.mayandbrett.co.uk\/\">the local home brew shop<\/a> and back (40km) and return bearing yeast!\u00a0\u00a0 Put a teaspoon in the jar.<\/li>\n<li>Celebrate wildly when the fermentation appears to start a few hours and post on Facebook.\n<p><figure id=\"attachment_12\" aria-describedby=\"caption-attachment-12\" style=\"width: 150px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-12 \" alt=\"2013-09-27 22.22.29\" src=\"https:\/\/thomas.w-p.me.uk\/blog\/wp-content\/uploads\/2013\/10\/2013-09-27-22.22.29-150x150.jpg\" width=\"150\" height=\"150\" \/><figcaption id=\"caption-attachment-12\" class=\"wp-caption-text\">Bubbles<\/figcaption><\/figure><\/li>\n<li>Sit back contentedly and wait for the fermentation to work itself out.<\/li>\n<li>Panic wildly when the fermentation is so vigorous it bursts out of the airlock and splatters the wall.\u00a0 Put back in to a large saucepan for a couple of days.<\/li>\n<li>When fermentation has slowed to less cataclysmic levels, put back in to a demijohn and allow the fermentation to work itself out.<\/li>\n<\/ol>\n<p>That&#8217;s where I am now &#8211; we tasted it and it actually wasn&#8217;t too bad, certainly a chance it will be drinkable in a few months\/years.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The wine making all started up again because of two things.
